Rich Dairy-Free Pesto

Ingredients

  • 1 Bunch of Basil

  • 1/2 cup of Pine Nuts

  • 1 Avocado

  • 1 tablespoon of Nutrional Yeast (or more for a cheesier taste)

  • 1 1/2 cup of extra virgin olive oil

  • Salt and Pepper to taste

Directions

1. Lightly roast the pine nuts over low heat for 5 minutes stirring frequently.

2. Combine all ingredients together in a food processor with 1 cup of EVOO.

3. Gradually add remaining EVOO into the mixture with the food processor on. We put it on our favorite pasta but feel free to add on to your favorite dish and enjoy!
