Herb Crusted Rack of Lamb

Ingredients:

1. Lamb rack

2. Rosemary

3. Spinach

4. Parsley

5. Garlic

6. Breadcrumbs

7. Arborio rice

8. Flavored olive oil

9. Butter

10. Lemon

Step 1. Blend together spinach, parsley, flavored olive oil, lemon zest, and melted butter

Step 2. Mix in breadcrumbs to green sauce

Step 3. Score the fat side in the top of lamb rack. Season generously with salt and pepper

Step 4. Sear lamb in neutral oil until sides are golden brown. Add butter, garlic, and rosemaryGalway through searing. Base the meat.

Step 5. Once meat is golden brown take from pan and layer fat side with Dijon mustard. Rub in herb bread crumbs (make sure to pat down!)

Step 5. Place rack in an oven at 375° for 15 minutes or until medium rare.

Step 6. Let rest for 15 minutes and enjoy!
